Sweet Potato Avocado “Toasts”

Sweet potato season is in full swing at our house! I love sweet potatoes year-round, but especially in the fall.  They’ve  been involved in many a chili dinner over the past couple of weeks. I also love avocado toast (basic, I know, but whatever it’s easy and good). So naturally, when I heard about combining sweet potatoes and avocado toast, I had to test it out.

Loved topping these with pom seeds, but like any avocado toast recipe the toppings are up to you!

I put a seasonal spin on the recipe by topping the “toasts” with Pom Wonderful Pom Poms. I’m thinking this one will be a healthy addition to our holiday appetizer spreads this year. I kept it dairy free this time, but next time I might toss a little goat cheese on top. Who knows, things might get crazy.

Spanish Garlic Shrimp

Hi everyone! I’ve been a little behind on the blog lately, but I’m bringing things back with a bang with this AMAZING shrimp recipe. To me, tapas make the perfect meal. As many shareable veggie and protein dishes as you heart desires, along with a ton of bread to soak up the delicious sauces…what’s not to love? Shrimp and garlic, or gambas al ajillo, is one of our favorites at our go-to Spanish date night spot: Si Tapas.

Gambas al ajillo AKA garlic shrimp.

With a little help from Food & Wine‘s recent travel issue highlighting a few classic Spanish recipes, I made gambas al ajillo at home and it was a big hit (and a nice departure from our usual Monday night salmon and veggies). Hope you love it as much as we do!

Chocolate chip zucchini bread ingredients_header

Chocolate Chip Zucchini Bread

It’s too early for chocolate chip pumpkin bread, but not to worry. I have a solution. I’m celebrating summer squash season (and Game of Thrones season) with this chocolate chip ZUCCHINI bread! This recipe contains two entire zucchinis, so I’m considering it a health food.

Is butter a carb?

This recipe is just about as easy as baking gets, but you wouldn’t know it! No mixer required. And, it does not taste like zucchini. I found this gem over on Love & Lemons, where you can also find instructions for a vegan version.

Roasted Portobello Caps

A delicious, super healthy meal that is ready in under an hour and requires less than 10 ingredients? Yes please! TBH, I’m typically not a mushroom person. I have a hard time accepting them as a protein substitute (although they’re often positioned that way to vegetarians)! However, that was before I discovered this recipe. We are about to have these roasted portobellos for dinner for the third week in a row!

Roasted portobellos with asparagus

I love a simple recipe and this is the definition of simple. The portobellos soak up all the delicious flavor of the marinade and make a perfect main when paired with roasted asparagus. They would also be absolutely delicious grilled, but I do love the convenience of throwing both the mushrooms and the asparagus in the oven and serving dinner in under 30.

white bean asparagus flatbreads

White Bean and Asparagus Flatbread

If you are a big hummus fan like me, this white bean and asparagus flatbread recipe is for you! Hunter says this may even be his new favorite meal (it has a healthy dose of carbs with toasted whole wheat naan, and is topped with pine nuts and feta so what’s not to like?). I’ll definitely be celebrating spring weather and spring ingredients on the patio with these little gems and a big green salad.

We like our red pepper flakes.

As you can see from my recent posts, white beans have pretty much become a staple for us. This kale, white bean and sweet potato noodle bake is another recipe that consistently makes an appearance in our weeknight dinner rotation. Legumes are a great way to make vegetarian meals more filling!

The original version of this recipe can be found in the Love & Lemons cookbook – which I highly recommend you invest in if you enjoy plant based meals! The recipes are fresh and flavorful and always utilize seasonal ingredients.

Chipotle Shrimp Taco Salad

Taco salad combines two of my favorite things, and this chipotle shrimp version is not to be missed! You guys were loving this recipe on Snapchat Tuesday night so here it is…and if you love this, you definitely need to check out my spicy shrimp taco recipe for when a salad just won’t cut it.

Topped with a generous helping of cilantro avocado dressing, of course!

We’ve had a couple of 80 degree days in Dallas lately, so a salad with spicy shrimp and refreshing avocado and herb dressing was calling my name this week. And, this dish is pretty easy to throw together. I typically make the cilantro avocado dressing a day or two in advance and use it in as many lunches and dinners as possible because it is amazing. This week, I saved some extra dressing and made a loaded sweet potato with peppers, black beans and feta.

Kale, White Bean and Sweet Potato Noodle Bake

Is there anything I love more than a one pot meal? Yes. A one pot meal that is so good and so easy that I made it twice in one week and didn’t get bored with it at all. And guess what? This kale, white bean and sweet potato noodle bake is back on the menu this week. I’d even go so far as to say this meal is weekend worthy (it has cheese!!).

Also, it’s amazing for you.

This recipe is from Inspiralized, one of my favorite blogs for recipes that are packed with vegetables and super flavorful!

Sweet potato chili

Sweet Potato Black Bean Chili

As we say at our house, “when in doubt, make chili.” I mean, what’s not to love about chili? It’s easy to throw together, makes fantastic leftovers, and provides the opportunity to use all of your favorite toppings. This version is hearty, healthy and vegetarian!

Our toppings of choice this time around: avocado, cilantro, and cheddar.

I’ve been obsessing over this black bean sweet potato chili recipe since October. You can find the original over on What’s Gaby Cooking! Sweet potatoes are making major appearances in our weeknight dinner rotation and I’ll be sharing another one of our favorite sweet potato dishes next week, so stay tuned!

Great Green Salad

I’m completely in love with this super simple, incredibly delicious salad! I discovered it one afternoon when I combined a random handful of ingredients I had in the fridge, and I’m so glad I did. It’s packed with nutrients, and makes a perfect lunch or side for your main protein or pasta dish.

Catch a health vibe!

This salad is all about quality ingredients. Fresh greens and a solid avocado are musts – I’m obsessed with Lacinato kale lately. It will change your world. Also, make sure you use the best olive oil you can find and fresh S+P…it makes all the difference!

Butternut Squash Mac & Cheese

Butternut squash mac and cheese is a serious game changer. I mean, is there anything better than a healthier version of your favorite comfort food and a glass of wine on a weeknight? I really don’t think so.

Cute cast iron skillets: Lodge!

I won’t lie to you, this is not the mac and cheese you’re used to. It’s difficult to create mac and cheese without the cheese. But, it’s a close second and it’s healthy. A combination of herbs and spices and a crispy walnut topping creates an amazing texture that you will want to keep in your weeknight meal rotation. I combined this recipe with a little inspiration from Snap Kitchen (they sell an excellent chicken butternut macaroni, which you could easily add to this recipe).
