bananas

Chocolate Chip Banana Bread + Muffins

Chocolate chips + bananas = the perfect combo! So of course I doubled the recipe for this chocolate chip banana bread and made two loaves and bonus muffins. It was the right thing to do! The addition of Greek yogurt makes this recipe a keeper…I use Greek yogurt in my pumpkin bread (also great with chocolate chips FYI) and it’s a game changer.

Obsessed with this Anthro muffin pan

We ate these muffins for breakfast all weekend, but feel free to get crazy and switch things up by eating them for dessert. They’re pretty much perfect for any occasion, so you should make them. The original recipe is over on Lovely Little Kitchen – you can view it here!

Southwestern salad

Southwestern Salad with Cilantro Vinaigrette

I’ve finally discovered a salad that is filling enough for dinner and I’m so excited to share! This salad has it all…crispy quinoa, perfectly seasoned roasted veggies, and a cilantro vinaigrette worth obsessing over.

Southwestern salad

I mean…

This recipe is from my go-to resource for fresh and healthy (but still totally delicious) recipes, What’s Gaby Cooking. You can find the original here! I switched things up slightly, so feel free to do the same and add whatever vegetables and toppings your heart desires! Hunter added a grilled chicken breast to his. Let us unleash the health vibes!

Vegetable lasagna

Ina Garten’s Vegetable Lasagna

If it contains veggies, it is totally healthy and nutritious, even if “it” is a cheesy delicious lasagna…right? YOLO. I was in the mood for a project on Sunday night (a food related project, obvi) and coincidentally very in the mood for lasagna. So, I was thrilled to find Ina Garten’s recipe for roasted vegetable lasagna on Barefoot Contessa.

Vegetable lasagna

SO good.

It’s not NOT time consuming, but there are a few shortcuts I’ll include in the instructions. And the quality of ingredients makes a huge difference, so buy the good stuff. You’ll have leftovers for like a week, so it’s basically an investment. The veggies in this recipe are zucchini and eggplant, but you could easily add in mushrooms. Next time I make it, I’ll be adding some spinach!

I’m putting this recipe on my list of “things to feed a crowd with” because like the other recipes on that list (primarily enchiladas), you can assemble it ahead of time and just pop it in the oven whenever you’re ready! Great success.

Roasted Vegetables

Roasted Vegetable Orzo

Spring is here and I’m catching a major veggie vibe! We worked this roasted vegetable orzo recipe into last week’s dinner lineup and it was a hit. Lemon, garlic, fresh produce and Mediterranean flavors for the win.

Orzo with Vegetables

Toss with feta, fresh herbs and a lemon vinaigrette.

This dish could serve as a main or side, and you can always opt to add chicken or shrimp for protein! The original recipe can be found over on Vanilla and Bean.

homemade granola bars

Homemade Granola Bars

I am completely obsessed with making my own granola bars and am so excited to share this post with y’all! You guys…these are SO good. I’m all about easy grab and go snacks, but I struggle with granola/snack bars. I love the convenience of them, but even with the volume of options available it’s still hard for me to stick with a brand. Either the taste or the nutrition is always just a little off.  So, why not make your own?

Homemade granola bars

All of the freshly toasted oats kitchen smells.

Making these was surprisingly easy. It’s a great Sunday afternoon activity (especially if you’re already meal prepping)! I found this recipe on What’s Gaby Cooking, and customized it to fit the supplies I had on hand. I’ve gotta say…it feels good knowing exactly what I’m consuming at snack time! These are perfect to pack for work or school. Read on for the recipe, and I definitely encourage experimenting with the ingredients to find what you like!

Buffalo Cauliflower

Buffalo Cauliflower Tacos with Avocado Crema

The Big Game is right around the corner, and all I can think about is spicy buffalo cauliflower tacos! I love ordering buffalo cauli at restaurants, so I thought it might be time to attempt it at home. This recipe is baked, not fried, and includes the BEST avocado crema. Dallas peeps: It tastes just like Urban Taco’s avocado lime crema. It was all I could do not to eat it all with tortilla chips before the cauliflower was ready.

Buffalo Cauliflower taco with Avocado Lime Crema

When in doubt, make it a taco.

If you’re cautious about battered, baked cauliflower, I feel you. But you will not be sorry you tried this recipe (view the original over at Pinch of Yum!). Ease into this cauliflower-centric dish by making it into a comforting and delicious taco.

Shredded Brussels Sprouts Salad

This shredded Brussels sprout salad from What’s Gaby Cooking is giving me life this month! It’s the perfect green addition to the holiday cheese board and cookie mix. This salad has all of my favorites…pomegranate seeds, candied walnuts, parmesan, and plenty of crunchy shredded Brussels. Hunter actually said “this is the best salad I’ve ever had,” so it must be that good or I just need to make more weeknight salads.

Shredded Brussels Sprouts Salad

The perfect salad for all of your holiday festivities!

Also worth mentioning – I shredded these Brussels sprouts in this Cuisinart food processor, using the slicing/shredding attachment. I will never go back. Hand slicing these on a mandolin or with a knife sound so time-consuming now. Also it’s currently on sale, so go grab one for your foodie friend or yourself!

Shopping List: CultureMap Holiday Pop-Up

December snuck up on me this year! I can’t believe the holidays are almost here, but the Christmas tree is up in our first home and I’m ready to cover the floor around it with PRESENTS! I always love to shop local and share a little bit of Dallas with my friends and family, so I’ve made it a bit of a tradition to attend the CultureMap Holiday Pop-Up Shop (see last year’s post here!). It’s a great way to grab last-minute gifts from local holiday vendors!

Adeline Velvet Dress

Velvet dress by Adeline

G and I figured the pop-up would be the perfect time to do a little holiday Shopping List as well, so in this post you’re getting outfit details and an event recap! Lucky you! Adeline has SO many cute and cozy holiday outfits right now, but this velvet dress was a perfect fit. I also picked up a few (currently top secret) gifts while I was at it. Adeline is your spot for all the clothing, jewelry and shoe-lovers you’re shopping for! And not kidding, I got like 10+ compliments on this dress on Sunday alone. So it’s a winner!

Pumpkin pancakes

Whole Wheat Pumpkin Pancakes

What better way to kick off Thanksgiving week with pumpkin pancakes? I’m still in pumpkin mode (even though I prematurely decorated for Christmas because why not), so I see a few more weekends with this breakfast in my near future.

Pumpkin pancake

Pumpkin season still going strong for me.

I get major pancake cravings, but only treat myself to them every once in a while when we go out for breakfast because they can be super sugary and then I’m down for the count. Making them at home means 1. I get to stay in my PJs and 2. I can pick the ingredients! This healthier take on pancakes uses whole wheat flour and Mooala vanilla bean almond milk. If you’re over pumpkin season, you can adjust this batter recipe for whatever ingredients you like. Bananas, chocolate chips…you really can’t go wrong. Recipe adapted from Cookie + Kate. Mine turned out a liiiiitle bit crispier than hers (multitasking + pancaking).

sweet potato avocado toast

Sweet Potato Avocado “Toasts”

Sweet potato season is in full swing at our house! I love sweet potatoes year-round, but especially in the fall.  They’ve  been involved in many a chili dinner over the past couple of weeks. I also love avocado toast (basic, I know, but whatever it’s easy and good). So naturally, when I heard about combining sweet potatoes and avocado toast, I had to test it out.

sweet potato avocado toast

Loved topping these with pom seeds, but like any avocado toast recipe the toppings are up to you!

I put a seasonal spin on the recipe by topping the “toasts” with Pom Wonderful Pom Poms. I’m thinking this one will be a healthy addition to our holiday appetizer spreads this year. I kept it dairy free this time, but next time I might toss a little goat cheese on top. Who knows, things might get crazy.
