I won’t lie to you, this is not the mac and cheese you’re used to. It’s difficult to create mac and cheese without the cheese. But, it’s a close second and it’s healthy. A combination of herbs and spices and a crispy walnut topping creates an amazing texture that you will want to keep in your weeknight meal rotation. I combined this recipe with a little inspiration from Snap Kitchen (they sell an excellent chicken butternut macaroni, which you could easily add to this recipe).

Cauliflower rice makes an amazing base for so many dishes – you could almost forget you’re eating a vegetable. I posted my go-to cauliflower rice recipe on Instagram not too long ago, and have found the perfect place for it in these spicy, savory perfect-for-weeknight-dinner bowls.

Celebrate the latest Girl Scout Cookie with S’mores Brownies!

It is #TXCookieTime, AKA the best time of year to put your New Year’s resolutions on hold to indulge in a treat for a good cause. Fun fact: did you know that girl scouts have been selling cookies for 100 years? As a former girl scout, I can attest to the fact that my family bought at least 50% of my boxes every year. And we ate them. Because they are delicious.

We’re really treating ourselves around here lately, guys.

In addition to tasting great, selling cookies teaches valuable skills, and the proceeds are used to provide unique local experiences for girls! This year, we received a special package from Girl Scouts of Northeast Texas complete with a brand new cookie. And I’m pleased to say that it is 100% Hunter approved (obviously it’s also approved by me, it’s a cookie). Girl Scout S’Mores™ are graham cracker sandwich cookies with marshmallow and chocolate filling – basically a S’more without the mess! I’ll take it!

We decided to celebrate Texas Cookie Time and the launch of probably my new favorite girl scout cookie by making What’s Gaby Cooking’s S’mores brownies, naturally.

Water Grill: a restaurant so nice I went there twice (in one weekend). The seafood restaurant from California is opening its brand new Dallas location TODAY at 1920 McKinney Avenue. I was lucky enough to get a sneak peek of both the dinner and brunch menus last weekend and they are absolutely not to be missed.

Wild Mexican Mahi Mahi Caponata

The restaurant’s interior is cozy and nautical, and the service was wonderful. For dinner, we opted for Blue Point oysters and jumbo lump blue crab cake to start. I enjoyed Mahi on a delicious bed of vegetables, while Hunter indulged in a filet. Of course, we had to try the mac and cheese (it has my approval).

Spicy Sweet Potato and Green Rice Bowls

Bowls, so hot right now. This recipe is a healthier take on one of my favorite bowls: the burrito bowl (the poké bowl is not far behind). The green rice recipe alone is a keeper, but add in perfectly seasoned black beans, roasted sweet potatoes, avocado, and pepitas, and you’ve got one seriously delicious bowl on your hands.

This recipe was adapted from Cookie and Kate’s Sweet potato green rice burrito bowls. You can find the full, original recipe here! Yes, the ingredient list is long, but the recipe is not difficult…I promise. I also love this bowl because it incorporates one of my all-time favorite fall veggies – sweet potatoes! You could also add bell peppers and onions to this, or sub the rice for farro.

Cacio e Pepe

In my Rome recap post, I shared that I completely fell in love with Cacio e Pepe on our honeymoon – I mean, what’s not to love about a pasta dish centered around cheese (and pepper)? Luckily for me, my Cravings cookbook has a pretty good recipe (no I don’t get paid to promote this cookbook I’m just THAT obsessed with it). So what better way to spend a Friday night than recreating one of the best pasta dishes I’ve ever had?

Really went hard with the cheese the first time around. Not mad about it. Feel free to switch it up by mixing different cheeses, or adding pancetta. Also, to truly recreate the pasta we had in Italy I had to attempt homemade spaghetti. I discovered that it’s actually pretty simple to make and roll out pasta dough, however operating the pasta maker is definitely a two person job. See: Hunter. I use the Atlas 150 pasta maker from Crate & Barrel (thanks LL!).
