Honeycrisp Kale Salad

Fall is here and you need to celebrate with this amazing salad! I mean, also celebrate with chocolate chip pumpkin bread and pumpkin pancakes, but in the spirit of attempting to keep things balanced we’re doing a salad today. This salad combines so many of my favorite fall flavors – honeycrisp apples, toasted pecans, cinnamon vinaigrette – it really is SO good.

This beautiful and delicious recipe was created by How Sweet Eats, and as she mentions in her original post, it is kiiiiind of a high maintenance salad. Like a put it together on a Saturday afternoon when you’re not rushed kind of salad. This recipe is so absolutely perfect for Thanksgiving/Friendsgiving/Christmas/any celebration in the next three months, I would just prep the pecans, pepita clusters, and dressing in advance and assemble when you’re ready to serve.

Buffalo Cauliflower

Buffalo Cauliflower Tacos with Avocado Crema

The Big Game is right around the corner, and all I can think about is spicy buffalo cauliflower tacos! I love ordering buffalo cauli at restaurants, so I thought it might be time to attempt it at home. This recipe is baked, not fried, and includes the BEST avocado crema. Dallas peeps: It tastes just like Urban Taco’s avocado lime crema. It was all I could do not to eat it all with tortilla chips before the cauliflower was ready.

Shredded Brussels Sprouts Salad

This shredded Brussels sprout salad from What’s Gaby Cooking is giving me life this month! It’s the perfect green addition to the holiday cheese board and cookie mix. This salad has all of my favorites…pomegranate seeds, candied walnuts, parmesan, and plenty of crunchy shredded Brussels. Hunter actually said “this is the best salad I’ve ever had,” so it must be that good or I just need to make more weeknight salads.

Also worth mentioning – I shredded these Brussels sprouts in this Cuisinart food processor, using the slicing/shredding attachment. I will never go back. Hand slicing these on a mandolin or with a knife sound so time-consuming now. Also it’s currently on sale, so go grab one for your foodie friend or yourself!

Sweet Potato Avocado “Toasts”

Sweet potato season is in full swing at our house! I love sweet potatoes year-round, but especially in the fall.  They’ve  been involved in many a chili dinner over the past couple of weeks. I also love avocado toast (basic, I know, but whatever it’s easy and good). So naturally, when I heard about combining sweet potatoes and avocado toast, I had to test it out.

Loved topping these with pom seeds, but like any avocado toast recipe the toppings are up to you!

I put a seasonal spin on the recipe by topping the “toasts” with Pom Wonderful Pom Poms. I’m thinking this one will be a healthy addition to our holiday appetizer spreads this year. I kept it dairy free this time, but next time I might toss a little goat cheese on top. Who knows, things might get crazy.

Spanish Garlic Shrimp

Hi everyone! I’ve been a little behind on the blog lately, but I’m bringing things back with a bang with this AMAZING shrimp recipe. To me, tapas make the perfect meal. As many shareable veggie and protein dishes as you heart desires, along with a ton of bread to soak up the delicious sauces…what’s not to love? Shrimp and garlic, or gambas al ajillo, is one of our favorites at our go-to Spanish date night spot: Si Tapas.

So, in honor of fall and the new snacks it brings (not posting a pumpkin spice recipe yet, but that doesn’t mean I’m not thinking about it), I’m sharing a healthier version of nachos today inspired by a recipe in the Love & Lemons cookbook – sweet potato nachos!

I love all things sweet potato (including sweet potato noodle bowls and sweet potato and black bean enchiladas), so it shouldn’t come as a surprise that after making this recipe I now prefer sweet potato nachos over regular nachos. Plus, they’re healthy and fun to make! The BYON (build your own nachos) bar may be making frequent appearances this football season. Just saying.

Peach, Basil and Ricotta Crostini

I love a good appetizer. In fact, appetizers might just be the best part of any and every meal for me – I could make a meal entirely out of apps. So of course, I love anything on a crostini.

I’ve been feeling inspired to make a crostini creation lately – in part because of Love & Lemons’ Fig, Feta and Mint Crostini and Chrissy Teigen’s “Sh*t on Toast” section of Cravings – and also because it’s a super easy vehicle for cheese.

I found some edible flowers during a shopping trip to Whole Foods last week, and took it as a sign. (Side note: edible flowers taste just like you would expect a flower to, so don’t set the bar too high). It’s also important to note that there are two kinds of cheese present in this appetizer: ricotta and feta. Plus, with peaches now in season, this recipe is a great excuse to get your fill!

Super Bowl of Chips and Dip + Baked Jalapeño Poppers

The Super Bowl, AKA day of super snacking. The Carolina Panthers face the Denver Broncos in what is sure to be a delicious day of chilling in jerseys and chowing down on sweet and savory game day treats.

The savory game day snack is my jam, so I have two easy, crowd-pleasing recipes for you:

There are few things I love more in life than a heaping bowl of chips paired with a bangin’ dip. It’s like diet Kryptonite! There is no limit to the amount of chips and dip I can consume. If you’re like me, just make sure there are a few other people around to help you out. Especially with this dip. It’s addicting AF.

As for the jalapeño poppers – enough said. Everyone loves these things. Crunchy, spicy, creamy, cheesy…you just can’t go wrong. And TBH, love football, but the Super Bowl just wouldn’t be as fun without great food. So let’s get started.

Roasted Red Peppers with Pesto Zucchini Noodles and Goat Cheese

A healthy meal involving goat cheese and pesto? Yes please. Too good not to share!

To preface this recipe, I am obsessed with my spiralizer. I have the Paderno 3-blade, and use it to incorporate more veggies into our meals pretty much as often as Hunter will allow (there was a month last year that consisted of a TON of spiralized zucchini spaghetti and meatball dinners, so I don’t blame him for limiting my zoodle usage.) But hey, the spiralizer has many benefits. It’s simple to use, easy to clean and disguises veggies as carbs (for the most part.) This week has been cray at the office so I was looking for something easy, flavorful and healthy – after all it is still January, people. Let’s not throw our health and wellbeing out the window that quickly.
