Roasted Vegetable Orzo

Spring is here and I’m catching a major veggie vibe! We worked this roasted vegetable orzo recipe into last week’s dinner lineup and it was a hit. Lemon, garlic, fresh produce and Mediterranean flavors for the win.

Toss with feta, fresh herbs and a lemon vinaigrette.

Homemade Granola Bars

I am completely obsessed with making my own granola bars and am so excited to share this post with y’all! You guys…these are SO good. I’m all about easy grab and go snacks, but I struggle with granola/snack bars. I love the convenience of them, but even with the volume of options available it’s still hard for me to stick with a brand. Either the taste or the nutrition is always just a little off.  So, why not make your own?

Making these was surprisingly easy. It’s a great Sunday afternoon activity (especially if you’re already meal prepping)! I found this recipe on What’s Gaby Cooking, and customized it to fit the supplies I had on hand. I’ve gotta say…it feels good knowing exactly what I’m consuming at snack time! These are perfect to pack for work or school. Read on for the recipe, and I definitely encourage experimenting with the ingredients to find what you like!

White Bean and Asparagus Flatbread

If you are a big hummus fan like me, this white bean and asparagus flatbread recipe is for you! Hunter says this may even be his new favorite meal (it has a healthy dose of carbs with toasted whole wheat naan, and is topped with pine nuts and feta so what’s not to like?). I’ll definitely be celebrating spring weather and spring ingredients on the patio with these little gems and a big green salad.

As you can see from my recent posts, white beans have pretty much become a staple for us. This kale, white bean and sweet potato noodle bake is another recipe that consistently makes an appearance in our weeknight dinner rotation. Legumes are a great way to make vegetarian meals more filling!

Great Green Salad

I’m completely in love with this super simple, incredibly delicious salad! I discovered it one afternoon when I combined a random handful of ingredients I had in the fridge, and I’m so glad I did. It’s packed with nutrients, and makes a perfect lunch or side for your main protein or pasta dish.

This salad is all about quality ingredients. Fresh greens and a solid avocado are musts – I’m obsessed with Lacinato kale lately. It will change your world. Also, make sure you use the best olive oil you can find and fresh S+P…it makes all the difference!

A Toast to Toast: Lemon Edamame Avocado + Apricot Gorgonzola

Soooo July has been a crazy month and we’re only about halfway through! I’m in the final stretch of wedding planning (T-minus 70 days) and between work and the big day details, life has been busy (fun-busy, but still busy). So in honor of this crazy month, I’m giving a shoutout to one of my favorite go-to meals for even the busiest of weekdays…TOAST!

Breakfast, lunch, dinner…all perfect occasions for toast. It’s filling, requires no silverware, and can be made in 15 minutes or less. You can prep savory toast for lunch, sweet toast for breakfast, or a combination of both for whatever time of day the mood strikes. In all honesty, when I did this post I ate these toasts for dinner. And they were delicious.

Loaded Zoodle Bowls

Zoodles (zucchini noodles) are back on the blog! This loaded zoodle bowl is one of my favorite lunches right now because it’s light and fresh, easy to prep, and with plenty of veggies and an herb pesto, it’s super healthy!

Also love topping these with avocado and sliced almonds.

About a month ago I tested out Love & Lemons’ spring broccolini and kale quinoa bowls and became obsessed with herb pesto. I loved the broccolini and kale quinoa bowls too and started to play around with different ingredients, but always kept the pesto the same (minus the peas, can’t do peas).

As you know from my roasted red peppers with pesto zucchini noodles and goat cheese and sweet potato noodle bowls posts, I love my spiralizer! So of course I felt the need to incorporate zoodles.  You could also make a delicious lunch bowl with cucumber noodles (I did this a few weeks ago with the same pesto and it was awesome!).

Brighten your day with Less Sad Desk Lunches

Your desk lunch doesn’t have to be sad. In fact, it can be the highlight of your workday if you put a little planning into it.

Of course, ideally we would all be sitting on a patio somewhere sipping cocktails and enjoying a nice cheese board, but sometimes that’s just not an option. Now, with the invention of mason jar salads and major improvements in the plastic lunch container world (how cool are these adult lunch boxes?) lunch at your desk can officially be less depressing and more enjoyable.

Key attributes of a  great desk lunch include:

  • Portability (major key)
  • Ability to fit in office fridge
  • Easy assembly
  • Minimal mess
  • Great tasting (necessary)
  • Healthy (for the most part…)

Today I give you two options that meet all of the above criteria:

  • Lemon Tarragon Salad with Sautéed Vegetables + Veggie Burger with Lemon Hummus and Sprouts (my current fave)
  • LL’s Salad in a Jar (bonus: makes a great Instagram)
