Kale, White Bean and Sweet Potato Noodle Bake

Is there anything I love more than a one pot meal? Yes. A one pot meal that is so good and so easy that I made it twice in one week and didn’t get bored with it at all. And guess what? This kale, white bean and sweet potato noodle bake is back on the menu this week. I’d even go so far as to say this meal is weekend worthy (it has cheese!!).

Also, it’s amazing for you.

This recipe is from Inspiralized, one of my favorite blogs for recipes that are packed with vegetables and super flavorful!

Pistachio Pesto + Caprese Salad

I’m not sure if you’ve noticed, but we’ve had a pretty strong pasta theme going since we came back from the honeymoon. It’s become a Friday night tradition. And, I’ve had some requests for easier recipes…so allow me to introduce a delicious, easy to execute pesto pasta dish that you can throw together in less than 30 minutes. It also requires VERY little grocery shopping. You’re welcome!

Cacio e Pepe

In my Rome recap post, I shared that I completely fell in love with Cacio e Pepe on our honeymoon – I mean, what’s not to love about a pasta dish centered around cheese (and pepper)? Luckily for me, my Cravings cookbook has a pretty good recipe (no I don’t get paid to promote this cookbook I’m just THAT obsessed with it). So what better way to spend a Friday night than recreating one of the best pasta dishes I’ve ever had?

Extra pepe, please.

Really went hard with the cheese the first time around. Not mad about it. Feel free to switch it up by mixing different cheeses, or adding pancetta. Also, to truly recreate the pasta we had in Italy I had to attempt homemade spaghetti. I discovered that it’s actually pretty simple to make and roll out pasta dough, however operating the pasta maker is definitely a two person job. See: Hunter. I use the Atlas 150 pasta maker from Crate & Barrel (thanks LL!).

Honeymoon Recap: Rome

Guess who’s back…back again…

The honeymoon (AKA #Huntymoon) was absolutely amazing and I can’t wait to fill you all in! So I’m doing a series of three blog posts for you highlighting our adventures in Rome, Florence, and Venice. First up, Rome!

Rome was the first stop on our honeymoon itinerary and we filled it with sightseeing, eating, and drinking, naturally. So without further ado…let the food photos (peppered with some fabulous photos of the city and my outfits) begin!

Chrissy Teigen’s Cravings: My New Spicy Obsession

Oh Chrissy, how I love thee. Thank you for the spicy blessing that is CRAVINGS.

There are so many things I love about this cookbook. One being that most dishes require hot sauce, butter, or both. As you can see, I have quite a few recipes bookmarked:

Cravings1

I’ve been out of town every weekend since the end of March, and was really feeling like celebrating my first relaxing weekend back home with some carbs. Pepper’s Spicy Clams and Pasta was calling to me. Seafood, pasta, herbs, crushed red pepper? Yes, yes, yes, yes. I opened one of my bottles of cab franc from Fredericksburg and…perfection.

Seriously Delicious Spaghetti Inspired by Delfina San Francisco

You know a meal is really good when you want to recreate it right after eating it.

Work took me to San Francisco last week, and I’m so glad because it led me to one of the best pasta dishes I’ve had in a long time (along with the opportunity to sip some of Northern California’s best wine, of course.)

I’ve been waiting for another Italian meal to sweep me off my feet since I was in NYC last year. There is truly nothing better than good Italian food. Delfina in San Francisco did not disappoint.

  • Venue: Delfina
  • Location: 3621 18th St., San Francisco, CA 94110
  • Dish: Spaghetti (simple and delicious!)

When ordering pasta, spaghetti typically isn’t my first choice. However, this is not your average spaghetti. Serious care is put into creating this dish. It was brilliantly simple and unforgettable. So of course, I immediately turned to Google on the way back to the hotel to find out if the recipe was available online. When I found it on Tastebook (source listed as Madre) I decided to recreate it and share with you all. PLUS the last recipe I posted involved a healthy zucchini “pasta” so I thought I’d treat you to the real thing.

Bon Appetit!

Bonus: this dish does not require many ingredients! Just try to use quality tomatoes. It makes a big difference!
