Vegetable lasagna

Ina Garten’s Vegetable Lasagna

If it contains veggies, it is totally healthy and nutritious, even if “it” is a cheesy delicious lasagna…right? YOLO. I was in the mood for a project on Sunday night (a food related project, obvi) and coincidentally very in the mood for lasagna. So, I was thrilled to find Ina Garten’s recipe for roasted vegetable lasagna on Barefoot Contessa.

SO good.

It’s not NOT time consuming, but there are a few shortcuts I’ll include in the instructions. And the quality of ingredients makes a huge difference, so buy the good stuff. You’ll have leftovers for like a week, so it’s basically an investment. The veggies in this recipe are zucchini and eggplant, but you could easily add in mushrooms. Next time I make it, I’ll be adding some spinach!

I’m putting this recipe on my list of “things to feed a crowd with” because like the other recipes on that list (primarily enchiladas), you can assemble it ahead of time and just pop it in the oven whenever you’re ready! Great success.

Roasted Vegetable Orzo

Spring is here and I’m catching a major veggie vibe! We worked this roasted vegetable orzo recipe into last week’s dinner lineup and it was a hit. Lemon, garlic, fresh produce and Mediterranean flavors for the win.

Buffalo Cauliflower Tacos with Avocado Crema

The Big Game is right around the corner, and all I can think about is spicy buffalo cauliflower tacos! I love ordering buffalo cauli at restaurants, so I thought it might be time to attempt it at home. This recipe is baked, not fried, and includes the BEST avocado crema. Dallas peeps: It tastes just like Urban Taco’s avocado lime crema. It was all I could do not to eat it all with tortilla chips before the cauliflower was ready.

Sweet Potato Avocado “Toasts”

Sweet potato season is in full swing at our house! I love sweet potatoes year-round, but especially in the fall.  They’ve  been involved in many a chili dinner over the past couple of weeks. I also love avocado toast (basic, I know, but whatever it’s easy and good). So naturally, when I heard about combining sweet potatoes and avocado toast, I had to test it out.

Loved topping these with pom seeds, but like any avocado toast recipe the toppings are up to you!

I put a seasonal spin on the recipe by topping the “toasts” with Pom Wonderful Pom Poms. I’m thinking this one will be a healthy addition to our holiday appetizer spreads this year. I kept it dairy free this time, but next time I might toss a little goat cheese on top. Who knows, things might get crazy.

Roasted Portobello Caps

A delicious, super healthy meal that is ready in under an hour and requires less than 10 ingredients? Yes please! TBH, I’m typically not a mushroom person. I have a hard time accepting them as a protein substitute (although they’re often positioned that way to vegetarians)! However, that was before I discovered this recipe. We are about to have these roasted portobellos for dinner for the third week in a row!

I love a simple recipe and this is the definition of simple. The portobellos soak up all the delicious flavor of the marinade and make a perfect main when paired with roasted asparagus. They would also be absolutely delicious grilled, but I do love the convenience of throwing both the mushrooms and the asparagus in the oven and serving dinner in under 30.

White Bean and Asparagus Flatbread

If you are a big hummus fan like me, this white bean and asparagus flatbread recipe is for you! Hunter says this may even be his new favorite meal (it has a healthy dose of carbs with toasted whole wheat naan, and is topped with pine nuts and feta so what’s not to like?). I’ll definitely be celebrating spring weather and spring ingredients on the patio with these little gems and a big green salad.

As you can see from my recent posts, white beans have pretty much become a staple for us. This kale, white bean and sweet potato noodle bake is another recipe that consistently makes an appearance in our weeknight dinner rotation. Legumes are a great way to make vegetarian meals more filling!

Sweet Potato Black Bean Chili

As we say at our house, “when in doubt, make chili.” I mean, what’s not to love about chili? It’s easy to throw together, makes fantastic leftovers, and provides the opportunity to use all of your favorite toppings. This version is hearty, healthy and vegetarian!
